The Most Convenient Breakfast Dish: Mini Egg Muffins


I am a fan of fast and convenient when it comes to mornings! I like to get that caffeine in my system as soon as possible, can anyone relate? What that means is I’ve also gotta get a quick food base in…With this awesome egg bake recipe you can make a ton of little egg muffins and freeze them so you’re able to reheat them within minutes in the morning!

What you need for making this quick breakfast option:

10 eggs

A splash of milk of your choice, and then whatever ingredients you wanna add! I like…

Chopped Spinach

Chopped Mushrooms 

Feta Cheese

Small bits of deli turkey or ham (or both!)

3 tablespoons of Frank’s Red Hot if you’re into that sort of thing

Garlic Salt to taste

2 Muffin Tins with nonstick spray (this amount will fill both tins)


Preheat your oven to 350. First whisk all of the eggs and milk together. Then add all of the other ingredients you choose. I really don’t measure, I just toss things in! This makes for a super fast and easy dish! Then just pour your mixture into the muffin tins.

Bake these for 25-30 minutes and you’ve got breakfast that you can eat/freeze for days!
